Diabetes-Friendly Lunch: Ratatouille

Looking for a diabetes-friendly lunch recipe? This delicious Ratatouille recipe is just the thing.

Ratatouille recipe

Serves: 4

Ingredients:

  • 1T olive oil
  • 1 onion, cut into chunks
  • Black pepper and salt, to taste
  • 1 aubergine, cubed
  • 4 courgettes, cut into 2cm pieces
  • 1 can tomatoes or 5 whole tomatoes, chopped
  • 1T red wine vinegar

Method:

  • Heat olive oil in a pot, add onion and black pepper, and cook until soft.
  • Add aubergine and cook for 3-5 minutes.
  • Add tomato, red wine vinegar and salt.
  • Cover, and simmer until soft.
  • Add courgettes and cook until soft.
  • Serve on its own, or with a side of wholewheat bread or salad.

Top tip:

Make it your own by adding basil, thyme, chilli, smoked paprika, celery, leeks, butternut cubes, chickpeas or lentils.
