Diabetes-Friendly Lunch: Broccoli and Mushroom Soup

Broccoli and Mushroom Soup recipe

Serves: 4

Ingredients:

  • 1 onion, chopped
  • Salt and pepper, to taste
  • 2-3 cups mushrooms, chopped
  • 1 large potato, peeled and chopped
  • 2-3 cups broccoli, chopped
  • 1L chicken/veg stock
  • 1T olive oil

Method:

  • Heat olive oil, add onion, and cook until soft.
  • Add mushrooms and pepper, and cook on medium heat for 2 minutes.
  • Add potato and cook for 3 minutes.
  • Add ½ the broccoli and the warmed stock.
  • Cover and cook for 15 minutes until all the vegetables are soft.
  • Add remaining broccoli and blend until smooth.
  • Add salt as needed.

Top tip:

Add a drizzle of cream or milk at the end, or stir in after blending, for an extra creamy soup.
