Diabetes-Friendly Snack: Honey Cookies

Honey Cookies recipe

Makes: 15

Honey Cookies

Ingredients:

  • ½ cup coconut oil, melted
  • 3T honey
  • Pinch of salt
  • 1 cup desiccated coconut 
  • ⅔ cup flour 
  • ½ cup whole oats
  • ½t vanilla essence (optional)
  • 50ml warm water
  • 2 eggs

Method:

  • Preheat oven to 180°C.
  • Mix honey and oil, then add to dry ingredients and warm water. 
  • Stir in eggs.
  • Line a baking tray with baking paper.
  • Roll small balls and place them on tray, pressing down and shaping gently with a fork.
  • Bake for 15-20 minutes, until golden.

Top tip:

Add 4T cocoa powder for chocolate cookies, or ½ cup sunflower, chia or flaxseed for seed cookies!
