Diabetes-friendly lunch: Asian Slaw

Looking for a diabetes-friendly lunch recipe? Try this easy Asian Slaw – just mix together and eat!

Asian Slaw recipe

Serves: 4

Asian Slaw

Slaw ingredients:

  • 2 cups red cabbage, finely sliced
  • 1 cup green cabbage, finely sliced
  • 1 cup carrots, peeled and grated
  • ½ cup spring onions, chopped
  • Sprinkling of sesame seeds
  • 1 cup chopped coriander

Asian dressing ingredients:

  • 3cm piece of ginger, grated
  • ½ cup soya sauce 
  • 100ml vinegar (rice wine/apple cider)
  • 1.5t sesame oil

Method:

  • Mix cabbage, carrots and spring onions in a bowl.
  • Mix ingredients for dressing and let it rest for 30 minutes.
  • Add dressing to cabbage and massage gently.
  • Add sesame seeds and coriander.

Top tip:

Switch out the soya sauce for tamari for a deeper, richer flavour.
