Diabetes-Friendly Dinner: Spinach and Feta Pie

Why not switch up your dinner prep with this low carb Spinach and Feta Pie? Tasty, healthy and easy to add different flavours.

Spinach and Feta Pie recipe

Serves: 4

Ingredients:

  • 4-6 cups spinach, chopped
  • Olive oil
  • 1 onion, finely sliced
  • Black pepper, to taste
  • 1 clove garlic, crushed 
  • 2 cups feta, crumbled
  • 3 eggs, whisked
  • 8 layers of phyllo pastry
  • 2T butter

Method:

  • Steam spinach with a little water in a pan covered with a lid.
  • Remove from pan and cool. Squeeze water out of the spinach and set aside.
  • Preheat oven to 180°C.
  • Heat olive oil and cook onion until soft. 
  • Add black pepper and garlic.
  • Add onion mix to spinach and allow to cool.
  • Add feta and eggs.
  • Oil a baking dish and lay out 4 layers of phyllo, making sure they fall over edges of the dish.
  • Place spinach mix inside the phyllo, then place 4 more layers of phyllo on top. 
  • Brush with melted butter.
  • Bake until golden and crispy (about 20 minutes).
  • Serve with tomato, olive and cucumber salad.

Top tip:

Mix in parsley, dill or mint for a different flavour, and serve with a tomato, olive and cucumber salad.
